COCO BANANA DATE SHAKE

There is a little fruit & nut shop en route to Palm Springs that is famous for their date shakes. They only have date or date-banana and they are delicious. They are made with the creamiest of ice creams. I remember getting them with my mom and sister when we'd drive out to see my grandma and we swore we each needed our own. We would drink them fast, the cold sweetness being just the refreshment driving through the hot desert. I could get through about half of it before the heavy cream coated my insides and the thought of finishing the whole shake seemed like a task. I can still see the cup they came in in my memory. A taupe-ish color with swooshes of pink and purple and a big thick straw so the chunks of date could get through. I guess I've always had an affinity for all things ice cream. 

Speaking of, in an effort to cool it on the ice cream habit we've come to around here, I am finding alternatives for a more nutritious frozen treat. We're having some warm days this week, so this coconut-banana-date shake is just the thing for an afternoon snack. I don't usually go for bananas in shakes/smoothies, but it keeps everything cohesive and smooth here. The combination is sweet and creamy, without too much of either. This is the shake I have no problem polishing off.

COCO BANANA DATE SHAKE // Makes 2

I included a note for a bit of protein powder here because the times I am needing a shake is usually when I am a just moderately hungry - early morning before a workout or afternoon slump time. Adding a bit of protein to a shake or smoothie helps it "stick to my ribs" until a real meal. It is by no means necessary. I don't want to pump a particular brand of protein powder, but there are a plethora of plant based options, as well as good quality whey proteins (such as Tera's Whey) that don't have a bunch of junk fillers in them. Read your labels and know you usually get what you pay for on this one. I also like the addition of oats in smoothies and think this would pass for a quick breakfast if you added them here. They make a lot of sense with these ingredients. Let me know if you try it.

If you want it similar to a milkshake or ice cream, use regular coconut milk. The light kind will still be creamy, but much thinner and a coconut beverage (the sort you find in the fridge) will be like an everyday smoothie. Up to you. 

2 cups coconut milk

4 large pitted Medjool dates, chopped up

1/2 scoop vanilla protein of choice (optional)

one small banana, preferably frozen

1/2 tsp. cinnamon

1-2 cups crushed ice

splash of orange juice

In a blender, combine the coconut milk, dates, protein (if using), banana, cinnamon, ice and splash of oj. Blend everything together well until the dates are in tiny pieces and everything is smooth. Adjust with as splash of this or that as desired. Enjoy cold.

MEYER LEMON LOAF

The weekends have been full recently. I have taken on a couple catering jobs, there have been house guests, birthdays, baby showers and such. All good things, but full. No glorification of busy here, believe me, I like the fullness, makes the quiet and stillness sweeter. No matter the pace, a little breakfast and coffee is my favorite - it gets my buns out of a warm bed. Usually eggs when I can sit and enjoy, granola when I need to be quick, and now, this lemon loaf keeps reappearing in the rotation.

I am not exactly fulfilled by the tinkering of a recipe, maybe a little bit, but it's either good or it's not - I log it away or forget it. This is the fourth time I've made this lemon loaf. The tinkering part is out of character, the lemon obsession is part of my consitution. Meyer lemons are sweeter and less puckering than a standard, likely Eureka, lemon. I made the original (Deb is known for dependable recipes), then I have been adapting it, to be both dairy and gluten free in the following renditions. Each of them have looked different. Each of them have been tender and moist, an understated sweetness and perfectly lemony. It's just the brightness you need with coffee on a chilly morning.

MEYER LEMON LOAF // Makes one 9'' loaf

Adapted from the Grapefruit Pound Cake in The Smitten Kitchen Cookbook

The original recipe calls for 1 1/2 cups all purpose flour. I wanted to play around with some gluten free flours and came out with the amounts below. I realize it may be a high maintenance combination for some of you, and a GF All Purpose blend of your choice would be fine as well. If there is no need for you to make it gluten free, use the unbleached all purpose, but I wanted to give the option for those that prefer or need it this way. The original will pop up in the center, the GF version stays slightly flat on top. My oven is being moody and the temperature has been inconsistent, so mine fell. Tastes fabulous regardless of appearance.

  • 2 large eggs

  • 1/2 cup olive oil

  • 1/4 cup whole milk yogurt, buttermilk or coconut milk

  • 2 heaping Tbsp. meyer lemon zest

  • 2 Tbsp. meyer lemon juice

  • 2 tsp. lemon extract

  • 1/3 cup turbinado sugar

  • 1/2 cup natural cane sugar

  • 1 cup almond flour

  • 1/2 cup rice flour

  • 1/3 cup oat flour

  • 1 Tbsp. flaxseed meal

  • 1/2 tsp. sea salt

  • 1/4 tsp. baking soda

  • 1 tsp. baking powder

  • lemon glaze

  • 1/3 cup meyer lemon juice

  • 2 Tbsp. natural cane sugar

Preheat the oven to 350'. Grease a 9'' loaf pan.

Whisk the eggs, olive oil, yogurt (or alternative), zest and juice of the lemon and lemon extract together well.

In another mixing bowl, combine both sugars, almond flour, rice flour, oat flour, flaxmeal, salt, baking soda and baking powder and mix together. Add half of the dry mix to the wet, stir to combine, add the rest or the dry and stir everything together. Pour the mixture into a prepared 9'' loaf pan.

Bake for 40-50 minutes or until a cake tester comes out clean. While the cake bakes, make the glaze. Combine the lemon juice and sugar in a small saucepan over low heat and cook until the sugar dissolves. When the cake is finished, let it cool for 10 minutes before inverting (if you choose). Prick holes in the top and pour the glaze over the warm cake. Let the cake cool completely while it absorbs the syrup. I enjoy mine with pom seeds because I honestly can't get enough of them.

Loving that quote. Today I am happy about vibrant green vegetables, impromptu dancing with my babe of a husband, your emails and comments, my health, dreaming up a big trip for next year, new favorite nail polish and so many new cookbooks (I've had enough of the social networking crankiness from this election week, bring on the good thoughts!).

To read through Deb Perelman of The Smitten Kitchen's book felt sentimental for me. The photos and writing are so quintessentially Deb. When I was trapped in a cubicle, I poured over her and Heidi Swanson's work. Printing out all the recipes I wanted to try (in color, of course), put them in plastic sleeves, and in a three ring binder because those things are at your disposal working in an office. I still have the binder, originally inspired by these two ladies, and now bursting open, far from organized with everything I've ripped out from magazines in the past few years. I'll stretch that baby pretty far before I buy a new binder. I emailed Deb when I first started this site, the kind of question I am sure she gets multiple times daily. I can't remember verbatim, but it was something to the effect of, "So, I started a blog. What do I do now?" Her response was short but perfect. She poignantly suggested that I cook and write authentically. That I stay true to myself and the way I want to cook - the process should be fufilling for me first, people will follow that authenticity, and I won't be dissapointed trying to create something that is chasing popularity alone. And maybe that isn't verbatim either, but it was certainly the jist, and it has always been in the back of my head as the best advice I received when making a blog, this journal, my own. I'm sure most of you are familiar with her site. She is witty, to the point, detailed and opinionated. Those same qualities come through in all the recipe headnotes of her new cookbook. She tells you the what, why and how, making the process easy to understand and foolproof. From someone who is not a perfectionist about the cooking process, I greatly respect people like Deb who test and fiddle until they've got the texture, taste and directions just right. I won't say it's necessarily health-focused, for those who are looking for books with gluten and dairy alternatives, but a number of the recipes are adaptable for preferences and allergies. She leaves no stone unturned, some of the most well written recipes I've seen, and you can see her hard work and quest for accurate recipes so clearly in her first book. Congratulations, Deb.

WHOLE WHEAT PERSIMMON RICOTTA SCONES // Makes 8-9 scones

Recipe lightly adapted from The Smitten Kitchen Cookbook by Deb Perelman

Deb calls for raspberries in her recipe, which look beautiful and I'm sure taste even better. My pastry eater around here isn't big on raspberries, so I tried a version with the persimmons I've been getting in my CSA basket and added a hint of fall-ish spices. If you want to stick with the original, substitute raspberries for the persimmons and eliminate the spices. 

The lesson I've learned the hard way, a few times, is to not over handle the dough. It's fine if there are chunks and bumps in it, the less futzing around with the dough, the better. Deb makes a note that this dough is damp because of the ricotta, which is what makes them so tender, so keep your hands and counter well floured. Regarding do-ahead tips, "Scones are best the day they are made. However, you can make and divide the dough, arrange on a baking sheet and freeze them until firm, then tranfer them to a freezer bag. If you're prepping just one day in advance, cover the tray with plastic wrap and bake them the day you need them. No need to defrost them, just add another 2-3 minutes to you baking time."

  • 1 cup unbleached all purpose flour
  • 1 cup whole wheat flour
  • 1 Tbsp. aluminum free baking powder
  • 1/4 cup natural cane sugar
  • 1/2 tsp. sea salt
  • 1/4 tsp. each of cinnamon, cardamom and ground ginger
  • 6 Tbsp. unsalted butter, chilled
  • 1 cup finely chopped Fuyu persimmons
  • 3/4 cup whole milk ricotta
  • 1/3 cup heavy cream

Preheat the oven to 425' and line a baking sheet with parchment paper. 

Mix the dry ingredients together, the flour through the spices. Add the butter with a pastry blender, and cut the butter into the flour mixture until the pieces are the size of small peas (this can also be done with your fingers, just be quick to not warm the butter, or a knife). Toss in the persimmons and break them up a bit with the pastry blender.

Using a flexible spatula, add the ricotta and heavy cream to the butter mixture and stir them in to form a dough. Working quickly, use your hands to knead the dough gently into an even mass.

Transfer the dough to a well floured surface, flour the top of dough, and pat into a 7 inch square, 1 inch high. With a large, sharp knife, divide the dough into nine scones. Transfer the scones to the prepared baking sheet with the spatula. Bake the scones for about 15-18 minutes until they are lightly golden at the edges. Cool them on the pan for a minute then transfer to a cooling rack.
